Tempeh Breakfast Sandwich
Really showing off the versatility of Tempeh, this breakfast sandwich with Tempeh scramble and Tempeh slices is a delicious way to start the day.

Ingredients
4 thick slices sourdough
1 medium avocado
Hot sauce or relish (optional)
For the scramble
125g tempeh
1/2 tsp black salt/kala namak
1 tsp wholegrain mustard
1/2 tsp garlic powder
2 tbs nutritional yeast
1 tsp oregano
1/4 tsp turmeric
Black pepper (to taste)
Splash of non-dairy milk
Oil of choice
1 tbs mayonnaise (optional)
For the slices
125g tempeh
2 tbsp soy sauce or tamari
1 tbsp maple syrup
1 tsp smoked paprika
Method
For the scramble:
- Crumble the tempeh up with your hands into a bowl (if using fresh tempeh, it can helpful to steam the tempeh for 10 minutes to soften it up for this stage; if using frozen it should already be soft)
- Add all the ingredients other than mayonnaise or oil and give it a good mix to ensure it's evenly distributed.
- Lightly oil a non-stick frying pan and put it on a medium heat.
- Add the scramble mixture to the pan, keep it moving using a spatula to cook it evenly. It should take just a few minutes to heat through.
- Add a splash more non-dairy milk if it looks as though it is drying out.
- Once it is cooked through, take the pan off the heat then stir in the vegan mayonnaise if using to make it extra creamy and rich.
For the slices:
- Slice the block of tempeh into thin strips, still thick enough to hold their shape.
- Combine the soy sauce, paprika and maple syrup in a bowl, then marinade your tempeh slices for at least 5 minutes.
- Heat a little oil in a non-stick frying pan. Once nice and hot, though not smoking, add the tempeh strips to the pan. Fry for 2 minutes on each, tipping in the remaining marinade towards the end and letting the liquid simmer.
To assemble:
- Add avocado to a bowl and mash with a fork. Season with salt and pepper to taste.
- Spread avocado on two slices of sourdough. Top with hot sauce or relish (if using). Add tempeh slices, and then spread over the tempeh scramble. Place the other two slices on top to complete each sandwich.
